The best work on screenwriting I've read is'save the kittens' its not a book on the story itself but rather on the process, and it's been helpful to me many times over the years. Its probably the only book of it type I've ever read that was actually useful to me personally in any way, I've even added it to my poker stack when I play poker to read while I play the game.
Philip K. Dicks & Martin Amis & Jonathon Frankel's 'PA MINIMUM! How to Write, Hire, and Fire the Best Screenwriters in America' is also a good one to read if your in management. It details the kinds of things screenwriters do and why they do it, and its written as a kind of business book. It's a bit polemic, but it's worth reading if you consider yourself a creative person and are frustrated with the market.
The best book about editing I've read is Daniel Gold's 'The Editing Journey' it goes through the story of editing and how it works, and it goes through each and every stage of the process in painstaking detail. It has bits on practical editing like 'getting out of drama' and how not to become entangled with your characters, it also has an excellent section on 'the member' which is the most important concept in editing. If this book is more of a learning experience than a good compendium, that's its purpose, but if you want to get better at editing, this is a good place to start.
